Buffalo Chicken Chili

I made this last weekend, adapting it from a Rachel Ray recipe.  Here's a link to the original recipe:

And here's the edited version to make it more SBD friendly.  I added lots more Wing sauce that what the recipe calls for, but we like things spicy. 








Ingredients














1 tablespoon extra-virgin olive oil (EVOO), 1 turn of the pan






2 tablespoons Smart Balance, plus more for greasing






2 pounds ground chicken






2 garlic cloves, chopped






2 celery ribs, finely chopped






1 medium onion, finely chopped








1 carrot, finely chopped






1 jalapeño, seeded and finely chopped






Salt and freshly ground pepper






1 1/2 teaspoons ground cumin (half a palmful)






1 teaspoon ground coriander (one-third palmful)






6 ounces beer (your favorite brew)








1/4 cup cayenne pepper hot sauce (or your favorite Buffalo Wing sauce)






One 15-ounce can tomato sauce






























3/4 cup crumbled blue cheese (about 4 ounces)








1. Heat a medium Dutch oven or large skillet over high heat. Add the olive oil, 1 turn of the pan, and the Smart Balance and melt together. Add the chicken and cook, breaking up the meat, for 6 minutes. Add the garlic, celery, onion, carrot and jalapeño. Season with salt, pepper, cumin and coriander, and cook for 5 minutes. Add the beer and scrape up any browned bits from the bottom of the pan. Concentrate the flavor of the beer by reducing the mixture over medium heat for 2 to 3 minutes. Stir in the hot sauce and the tomato sauce. Reduce the heat to low and simmer the chili for 15 minutes.
2. Serve in bowls or mugs, topped with blue cheese crumbles.

Thanks for the recipe, Joy!!!

I'll have to buy a can of beer for this. We're not big beer drinkers, but I'd like to try it. It looks be quite different..and sound tasty!!!

You may not miss the beer, if you're just buying a can.

I think I'll try it without the beer, then Joy. I'm sure it would add some flavor to it, but since we don't really care for the taste of beer, I'm sure we wouldn't miss it. It seems that it will have lots of flavor without the beer. What brand of wing sauce did you use??? I don't usually buy that either, but will for this recipe.

I don't think I've ever seen that brand down here. I'll just go read some labels and see what I come up with. Thanks for the info, Joy!!!

Awesome recipe.....

Caveat, you must like Buffalo sauce, if you do, this is a great recipe for that Buffalo chicken flavor. Thanks for posting it.
