I saw kale listed on Cathy's post about SBD Super Foods. I know what it is and have seen it in stores, but how do you prepare it? I had it in a soup once, not yummy at all. :-( What's the best way to prepare kale?

Trader Joe's also has a great selection of chicken sausage.


Although it would not work for this recipe, which calls for a cooked sausage, its also incredibly easily to make your own bulk chicken sausage (not in casings) using ground chicken and some seasonings and letting it marinate overnight.

Here's my very simple Kale recipe. If you like white vinegar you should enjoy this.

I threw this together so I dont have exact measurements on this, so you can play with the ingredients.

White Vinegar
Water
Olive Oil
Red Pepper Flakes
Salt & Pepper.

I used Kale & Collard greens fresh from the farmers market. Wash and rinse the kale and your choice of another dark leafy green such as collards. Remove stems from Kale and your other greens and chop into small cuts. (you can just do kale if you like)

In a large saucepan add water and white vinegar. I used water to vinegar at a 2 to 1(aprox 1 cup total)ratio. As soon as the water/vinegar mixture starts to steam add your kale/greens and steam/cook with lid on until the kale/greens start to wilt. Add Olive oil (3 tablespoons aprox)and red pepper flakes, salt and pepper(to taste). Continue to steam cook until Kale/Greens are completely cooked.

Serve.

An easy and quick way to fix it is to take a can of kale, drain it (really squeeze out all the liquid), dump it in a saucepan with a can of drained and rinsed black eyed peas, add some diced ham or smoked turkey sausage and heat it up. Add salt, pepper & a few red pepper flaked to taste, plus a dash of vinegar. Yummy!

Growing up my favorite thing to do with Kale was to feed it to our rabbits who LOVED it so that we didn't have to eat it.

Hi There,


I have been lurking the boards but I saw this topic on Kale and I must tell you I tried it and I liked it believe it or not.


Here is the recipe.


Break the Kale up into bite size pieces.


Spray with pam add a little salt and bake on a cookie sheet at 400 for about 8 minutes or so.


They come out crispy and its almost like eating chips LOL


Its a good snack or a good way to add a veggie to a meal.

Make sense why you need to move into Phase 2.


I read thought it and I don't know why I am still scared.


Ok maybe someone can give me an example a first day on Phase2.

I ate everything the same as I did in Phase 1 except that I added an apple in the morning with my snack and I had 1/2 a sweet potato with my dinner.
