Jennie's Sexy Lasagna

Preheat oven to 350
Ingredients:
1 box 100% whole wheat lasagna noodles (brands are Hodgeson Mills or Heartland)
1 small tub part skim ricotta cheese
1 small tub low fat/fat free cottage cheese (optional - depends on how "goeey you want it)
1-2 cups shredded mozzerella cheese (1-2 cups depending on how cheesey you want it)
1/2-1 cup parmesean cheese
2 eggs
1-1.5 lbs extra lean ground turkey (browned and seasoned to your liking)
1 jar spaghetti sauce of your choice (I used Classico fire roasted tomato and garlic)
Cook (or don't cook) the lasagna noodles according to the directions on the box
Splash some spaghetti sauce in the bottom of your 9X13 baking dish - cover bottom
Set aside 1 cup of sauce to "top" your lasagna and put the rest in with the browned, seasoned turkey
In a separate bowl, mix the mozz cheese, parmesean cheese, ricotta cheese, cottage cheese and 2 eggs
In your sauce lined dish, layer 3 noodles, then about 1/2 the cheese mixture, then 1/2 meat mixture and REPEAT (noodles, cheese, meat)
Then add last layer of 3 noodles, any remaining cheese mixture, top with the 1 cup of sauce you set aside and then sprinkle mozz cheese on top
COVER tightly with foil and bake at 350 for 45 minutes to an hour
WHEN REHEATING: sprinkle with water to avoid getting dry and cover tightly with foil and heat for 45 minutes at 350 or until cheese bubbles.
This recipe both freezes and reheats well!!! ;-)

It looks like this when you are done: (this one was made on Monday, refrigerated over night and then reheated prior to being served the next evening and there was NOTHING left when I left the class, lol)

I just ate 3 small pieces of the lasagna - I am pretty sure that was a full 2 grain servings, lol - with 3 layers of noodles, so I ate probably 2 noodles and I ate a broken noodle earlier and a SB pizza - that's 3 grain for the day, lol

I am so glad everyone liked it!!! I am trying very hard not to go eat a piece since I am done with food for tonight but I have a huge chunk in the fridge!!!
