Warm Cabbage Salad with Apples, Feta, and Pistachios



A perfect cool-weather salad is easy to make with this recipe. Little flecks of pistachio dot a salad full of tart-sweet apple and salty Feta. Serve as a change of pace for an adult dinner party.

3 tablespoons extra-virgin olive oil
2 ounces Feta cheese, crumbled
1 tablespoon shelled chopped pistachios, toasted
1 red onion halved and thinly sliced
1 finely chopped clove garlic
1/2 head red cabbage thinly sliced
2 tablespoons balsamic vinegar
1 teaspoon sugar substitute
1/2 teaspoon fine sea salt
1/2 teaspoon pepper
1 tart apple peeled, cored, and coarsely chopped
2 ounces Feta cheese, crumbled
1 tablespoon shelled chopped pistachios, toasted
1 red onion halved and thinly sliced

1/2 head red cabbage thinly sliced
2 tablespoons balsamic vinegar
1 teaspoon sugar substitute
1/2 teaspoon fine sea salt
1/2 teaspoon pepper

1. Heat the olive oil in a large skillet over moderate heat.
2. Add the garlic and onions and saute 2 minutes.
3. Increase the heat and add the cabbage.
4. Saute for 2 minutes more, stirring constantly, until the cabbage begins to wilt slightly.
5. Off the heat, add the vinegar, sugar substitute, salt, and pepper, and combine well. Taste and adjust seasoning.
6. Stir in the apples, feta, and pistachios.
7. Before serving, rewarm over a low heat, tossing constantly, for 1 minute.
