Yogurt Cucumber Soup

Yogurt Cucumber Soup


A light, delicious soup.

Serving: 2
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 80 minutes




1 large or 2 regular cucumbers, peeled and seeded seedless cucumber
2 scallion
1/4 to 1/2 leaves only cup fresh mint
2 cup nonfat plain yogurt
1/2 tsp ground cumin
1 juiced lime
to taste salt





1. Combine all ingredients in a blender or food processor and blend until you've achieved the consistency you like.
2. Chill thoroughly. Stir well and taste before serving. You may need more mint leaves, lime or perhaps some salt.
3. Sprinkle with chopped nuts or scallion tops, if desired. Serves 2.
