Just wondering if anyone has any recipes for a healthy alfredo sauce?  Not even sure if that exists.. lol

Since traditional alfredo sauce is made with butter, cream and cheese there aren't any legal recipes floating around.

I don't know about a recipe, but I have found that the Laughing Cow light cheese melted over something does make a decent substitution for me.

I've used a combo of light cream cheese, ricotta, ff half and half, pasta cooking water, smart balance and Parmesan cheese. But I've never really measured though - I'd say one tub of ricotta, maybe 4oz cream cheese, 1/2 cup half/half, then enough pasta cooking water to thicken and make it into a sauce.

This is what I like to use for alfredo......
For my whole family, I use a small container of Alouette Lite Garlic and Herb cheese. I warm it up and add a little skim milk to make it into a sauce. Yummy!!
