How do you count this?

I just purchased the new SB book - SUPERCHARGED. There is a recipe in here that I just can't figure out how to count. I know it is a grain, but I must be missing something because I can't see how it meets the guidelines.
WHOLESOME OAT MUFFINS
3/4 c. plus 2T. rolled oats
1 1/4 c. whole-grain flour
1 1/2 t. baking powder
1/2 t. baking soda
1/4 t. cinnamon
1/4 t. salt
2/3 c. chopped walnuts
1/3 c. granular brown sugar substitute
1/3 c. canola oil
1 lrg. egg, beaten
1 t. vanilla
NI: Makes 12 servings
Per serving: 179 calories, 11 gr. fat, 4g protein, 18 g carbohydrate, 2g. fiber
What is the grain count in each muffin? I know that 1/4c. of the oatmeal would be a grain. I don't know how much whole wheat flour is a grain. One muffin doesn't meet the 3g fiber requirement. Seems like eating more than one of these would be a lot of calories. Each muffin has more than 1t. of oil in each one, so I would need to consider that also.
I do wish that the recipes included just how to count each serving.

It says that it makes 12 servings.

I was mainly confused because the fiber content doesn't meet the guidelines for a grain.
