After seeing the post with the idea of mixing pumpkin into oatmeal - I just had to experiment with this, and it turned out REALLY great. The kids gobbled it up in seconds. If you like/miss pumpkin bread, this is a great alternative.

Pumpkin Baked Oatmeal
1/4 cup canola oil
2/3 cup splenda
3 eggs
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon cloves
2/3 cup pumpkin (about 1/2 a small can)
1 teaspoon baking powder
1 teaspoon salt
3 cups dry oatmeal
1 cup fat free milk

Whisk oil, splenda, and eggs. Add spices, baking powder, salt,
pumpkin and whisk again. Add oatmeal then milk and mix. Spray 9X9
cooking pan with non-stick spray (I always use a 9-in pie pan). Bake at 350 for 30-35 minutes.

I made these in muffin cups and they turned out perfect. Great on-the-go breakfast that I can keep in the freezer/fridge.
