I am craving/wanting something savory for dinner tonight...I already have part of it prepared I will then prepare Chicken Breast...but I have some zucchini that I would like to fix like potatos o'brien...The only recipe that I have found is obviously not legal for phase 1 which I'm on or SB so I'm needing some help tweaking the recipe...
I'm not sure what to sub for the cream of chxn soup I don't want it to be to watery or use too much since my GB are cooking in broth...I only have one ziplock sandwich bag of shredded zucchini so obviously I will have to cut the measurements down but I can worry with that...
2 bags frozen hash browns O'Brien
1 cube butter (cut into sm. pieces)
2 c. shredded Cheddar cheese
2 c. sour cream
2 cans cream of chicken soup

I'm not familiar with Potatoes O'Brien, but your idea of thickening the chicken broth/stock with corn starch is a good one, and one I use from time to time when I want a sort-of gravy.
I'd think 1-2 Tablespoons of corn starch to your broth should do the trick.
Let us know how it turns out!
Try a mixture of ff evaporated milk, chicken broth and corn starch.
Here's a great alternate side dish for your grated zucchini:
Zuchini-Cheese casserole
3 md.zuchini squash
1/2 c. chopped onion
fresh tomatoes-the amt you need will be different based on what kind of tomatoes you use and how big they are( i.e you need to use less regular tomatoes and more romas b/c romas are smaller)
2 Tbsp. olive oil
1# FF or LF
I don't know about potatoes o'brien, but here is a zuchini recipe that I really like:
ZUCCHINI HASHBROWNS:
2 T butter substitute
2 pounds zucchini, coarsely shredded
1/2 tsp. salt
1 tsp. finely minced green onion
1/2 clove minced garlic,
2 eggs
4 Tbsp Parmesan cheese
Combine zucchini with salt in a medium-sized bowl. Let stand for 15 minutes. Squeeze with your hand to press out moisture. Stir in eggs, cheese and garlic. Melt 2 Tbsp of the butter in a wide frying pan over medium-high heat. Take 2 Tbsp mixture and pat slightly to make a patty. Cook patties, turning once, until golden on both sides.
