Grilled Apricot Ginger Chicken

Grilled Apricot Ginger Chicken

1 teaspoon cardamom
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
2 tablespoons olive oil
10 skinned chicken breast halves
1 1/2 cups dried apricots
1 lemon, juice of
2 cloves garlic, minced
1 teaspoon minced ginger root
Directions:
In a small saucepan, place apricots and add water to cover. Add lemon juice, bring to a boil, reduce heat, and simmer until tender. In a blender or food processor, puree apricots and liquid with garlic, cardamom, cayenne pepper, salt, and olive oil. Add more water if too thick. Score the chicken breast several times on each side. Cover with the apricot mixture and marinate in refrigerator for several hours or overnight. Remove chicken from marinade and reserve marinade. Preheat oven to broil or prepare grill. Broil or grill chicken until cooked through. Heat marinade and spoon over chicken. Serve over rice.
