Lemon-Garlic Cauliflower-Broccoli Sauté


2 tablespoons canola oil
1 cup diced onions
1 tablespoon minced garlic
1 tablespoon peeled and minced ginger
1 teaspoon salt
1 cup water
3 cups cauliflower (cut into bite-sized pieces)
3 cups broccoli (cut into bite-sized pieces)
1 tablespoon lemon juice
1 tablespoon lemon zest (optional)

This vegetable dish has a delicately balanced flavor. A word of caution, however: When an acid is used with a green vegetable, the vegetable will lose its appealing bright green color. To avoid this, you might add the lemon juice just before you serve the vegetables.

Heat the oil in a large skillet. Add the onions, garlic, ginger, and salt. Sauté for 5 to 6 minutes. Add the water and cauliflower, cover the pan, and steam the vegetables for 3 minutes. Then add the broccoli, cover again, and steam for 4 minutes longer. (The broccoli should be bright green and tender.) Add the lemon juice to the vegetables just before serving. If you wish,
