Warm Steak Sandwich With Roasted Pepper Mayo (Phases 2 and 3)
What could be more appropriate for a quick and easy cookbook than "minute steak," a very thin piece of boneless beefsteak named for its ability to cook up fast. Juicy and warm — and served in this succulent sandwich — it's one of our favorites.
Prep time: 10 minutes
Serves 2
Ingredients
1 teaspoon extra-virgin olive oil
1/2 pound top-round steak, sliced into 4 pieces
1/8 cup chopped roasted red pepper (from a jar)
1/8 cup mayonnaise
4 slices multigrain bread, lightly toasted
1/2 small bunch arugula
Salt and freshly ground black pepper
Instructions
Heat oil in a large skillet over medium-high heat. Season steak with salt and pepper and cook until browned, about 2 minutes.
Puree red pepper and mayonnaise in a food processor until smooth. Spread mayonnaise on each slice of bread; make sandwiches with steak slices and arugula. Slice each in half and serve.
