Chop-Chop Salad with Spicy French Dressing

1. Ingredients





  1. 1 clove garlic, chopped
  2. 1/2 cup ketchup (sugar free)
  3. 1/2 cup cider vinegar
  4. 1/2 cup granulated sugar (splenda)
  5. 1 tablespoon Worcestershire sauce
  6. 1 teaspoon paprika
  7. Several dashes of hot sauce, to taste
  8. 1 head romaine lettuce, chopped
  9. 1 red onion, chopped
  10. 2 tomatoes, seeded and chopped
  11. 1 red bell pepper, seeded and chopped
  12. 1 cucumber, peeled, seeded and chopped
  13. 1 (15 ounce) can chickpeas, rinsed and drained
  14. 1 cup crumbled blue cheese



2. Cooking Directions




  1. In a small food processor, blend the garlic, ketchup, vinegar, sugar, Worcestershire sauce and paprika until smooth, about 30 seconds. Add the hot sauce and blend until combined.
  2. Place the lettuce, onion, tomatoes, bell pepper, cucumber and chickpeas in a large salad bowl. Toss with the dressing and top with the blue cheese.

Yield: 4 servings

Do you think feta would be a good substitute for the blue cheese in this??? We've tried blue cheese in the past and we're just not big fans of it either.

The recipe sounds great tho!!! Thanks for posting it, Destiny!!!

I think so; I had feta on hand but chose to save those cheese calories and not use any at all.

I'm trying to cut back on cheese as well, Joy. So if it was good without the cheese, I may skip it altogether too.
