Made this last night and it was good - not as spicy as we like though, I'd add more chili next time.
boneless chicken breasts
Marinade:
4 cloves garlic
3 shallots
1 bunch chives or scallions (we used scallions, couldn't find fresh chives)
1 medium green bell pepper
1 rib celery
1 scotch bonnet chili or 2 jalapeno chilis, seeded and minced
3 T Italian (flat leaf) parsley
2 teaspoons fresh thyme
2 T lime juice
2 T soy sauce
2 T olive oil
salt and pepper
Combine marinade ingredients in food processor (its more like a paste). Reserve about 1/3 cup of marinade, then place chicken breasts in rest of marinade, cover and refrigerate for 4-12 hrs. When ready to cook, oil grill, remove chicken from marinade and grill. Use reserved marinade for brushing chicken during cooking.
