Black Bean and Couscous Salad

INGREDIENTS

* 1 cup uncooked whole wheat couscous
* 1 1/4 cups chicken broth
* 3 tablespoons extra virgin olive oil
* 2 tablespoons fresh lime juice
* 1 teaspoon red wine vinegar
* 1/2 teaspoon ground cumin
* 3 green onions, chopped
* 1 red bell pepper, seeded and chopped
* 1/4 cup chopped fresh cilantro
* 2 (15 ounce) cans black beans, drained
* salt and pepper to taste

DIRECTIONS

1. Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
2. In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, and beans and toss to coat.
3. Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

Thanks for posting this, MichaelAnn. I made it last night and it was a big hit. I replaced the green onions with half of a small red onion, because that's what I had on hand. This is definitely a keeper!

Glad you liked it! I made a big batch last week, but I used quinoa instead of couscous and it was really good too. We brought it to the pool with us all week to have with lunch and my kids would gobble it up!

I'll have to try it with quinoa. Its funny but despite the fact that I regularly use other less common grains (like spelt and kamut) I forget about quinoa.

We had some friends over to the pool today and I made this. Everyone loved it. I also used quinoa because I didn't have WW couscous, just white. Used red onion and green pepper.
