Chipotle Barbecue Burgers w/ Slaw

1/2 cup dry breadcrumbs (I will omit, but whole wheat may be used)
2 tablespoons barbecue sauce (SBD friendly)
1 tablespoon chopped chipotle chiles, canned in adobo sauce
1 teaspoon bottled minced garlic
1 pound lean ground beef (or ground turkey or chicken)
1 large egg
Cooking spray
2 cups cabbage-and-carrot coleslaw
1 tablespoon reduced-fat mayonnaise
1 tablespoon reduced-fat sour cream
1 teaspoon sugar (Splenda)
1 teaspoon cider vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
4 (1 1/2-ounce) hamburger buns (use whole wheat or omit)
Combine first 6 ingredients. Divide mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook for 4 minutes on each side or until a meat thermometer registers 160°.
Combine coleslaw and next 6 ingredients (through pepper) in a large bowl; toss well. Place 1 patty on bottom half of each bun; top each serving with 1/2 cup coleslaw mixture and top half of bun.
Yield: 4 servings (serving size: 1 burger)



Karen, I saw these in my Cooking Light magazine too. Although I was the only one to try the coleslaw on the burger, my family enjoyed the BBQ burger part without the coleslaw. They didn't know what they were missing! Super yummy!
I also omitted the bread crumbs and they held up fine. Plus, I did mine on the grill :)

I also want to try this, maybe this weekend.
In the south, coleslaw is standard on a burger, as is coleslaw.
OOPS!
Made these over the weekend and they were really good! Only things we did differently - we grilled them on an outdoor grill instead and we basted the burgers the last minute of cooking with some more BBQ sauce. Oh, and I used ff, plain yogurt instead of sour cream for the slaw because I didn't have any on-hand, worked fine.
DD doesn't like spicy at all, so I mixed all the ingredients except the chipotles, made her patty, then added in the chipotles and made the other patties. Worked out great and was easy to "customize" if you have some little ones who don't like any spice.
