Java Chicken Barbecue

When I saw Cathy's Texas Mop Sauce recipe I remembered this barbecue recipe with coffee:


2 chicken fryers, cut up


Marinade:


1 c brown sugar ( I used about 1/4 c agave nectar/syrup)
1.5 c strong black coffee
1/2 c vinegar
1/4 onion, chopped
1.5 T dry mustard
1 T salt
1/2 t pepper
3 T butter ( I use about 1 T only or olive oil)


In large skillet or Dutch oven mix all marinade ingredients and bring to boil. Add chicken parts, turing to coat each piece. Reduce heat, cover and simmer for 35 minutes, or until chicken is just tender. Remove from heat and let chicken cool in marinade, then refrigerate 1 to 2 hours or overnight.


To glaze before serving: Remove chicken and bring marinade to a boil and reduce to thicken slightly. Brush over chicken and grill over hot coals until heated through and skin is crisp and golden. Or broil in oven.
