Lentil Salad with Feta Cheese


A great legume and cheese salad.

Serving: 2
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 15 minutes




1 (15 oz) can cooked lentils, drained and rinsed
1 pint cherry tomatoes, sliced in half
1/3 cup feta cheese
1 tbsp chopped fresh chives
1/2 cup chopped fresh cilantro
1 tsp olive oil





1. Combine ingredients in a bowl and keep chilled until ready to serve. Serves 2.

2. TIP: Making the salad the day before serving allows the flavors to meld nicely.

3. SUBSTITUTION TIP: Instead of the canned lentils, you can use dried lentils that you've soaked overnight.

Yum, this looks so easy -- I didn't even know you could get lentils in a can (other than lentil soup). Live and learn! :-)
