Eggplant and cucumber recipes??!

I am soon to be faced with a bumper crop of cukes and eggplants. Any suggestions? Not necessarily together in the same recipe! I already copied Cathy's grilled eggplant recipe, which sounds delicious by the way.

Eggplant lasagna is a favorite of ours. I don't really have a recipe, you can just use roasted eggplant slices in the place of noodles in your favorite recipe. I usually make a couple big batches and freeze it.

Thanks for the recipes and link. I have made zucchini lasagna before but did not think to make it with eggplant- good idea. I will also try salting and weighting the cukes to keep them hard... oops, I mean

Here is one I recently tried. It was very good. I omitted the sugar.

Viennese Cucumber Salad

Gourmet, December 2004
Makes about 4 cups
2 large seedless cucumbers (about 2 pounds)
1 tablespoon salt
1/3 cup white-wine vinegar
1/4 cup water
2 teaspoons sugar
1 garlic clove, forced through a garlic press
1 teaspoon dill seed
Score cucumbers lengthwise with a fork (I used a zester tool) and slice thin, preferably with slicing disk of a food processor. In a large bowl toss cucumbers with salt and let stand 1 hour.
In a small saucepan bring vinegar and water to a boil with sugar, garlic, and dill seed, stirring until sugar is dissolved, and let dressing cool. In a colander drain cucumbers and rinse under cold water.
Drain cucumbers well, squeezing out excess liquid. In a bowl combine cucumbers with dressing and marinate, covered and chilled, at least 1 hour and up to 6 hours. (After about 2 hours cucumber skin will discolor, but there will be no effect on flavor.)

Yum! That sounds like it would taste like pickles without all the sodium. I think I am ready to face the ripening crop now!
