Fried Green Tomatoes - recipe help?

If you tell me these are completely illegal, then I will forego them.  I have been wanting some all Summer.  We didn't have a garden this year, but my co-worker just brought me 2 beautiful green tomatoes.  I know we are not supposed to "fry" anything and the only recipe I have used for fried green tomatoes includes whole grain cornmeal and ww flour, fried in canola oil. 


Is it okay to have these fried? If so, does anyone have a legal recipe that is good?


If not, does anyone have a legal recipe that can be baked like for breaded meat?


Any other suggestions?

Having no experience with fried green tomatoes (other than the movie) I don't know if this would work.


You said they are fried in canola oil.

I understand the concern about the corn meal.


I'm thinking it could be a personal choice type situation.


The fact that it's whole grain has to help

And, I'm also a firm believer that if you're really wanting something there's a way to come up with a somewhat "legal" way to enjoy that particular food.

Some breading ideas:

Everyone here loves my chicken tender breading, its very light and crispy. Here is the recipe, you just sub the tomatoes for the chicken:

1/3 cup whole wheat flour
Salt and ground black pepper
1 pound boneless, skinless chicken breasts cut lengthwise into 1/2-inch wide strips
1/3 cup milk
1/3 cup grated Parmesan
1/2 cup oats
3/4 teaspoon garlic powder
3/4 teaspoon onion powder

Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.

In a shallow dish, combine flour and 1/2 teaspoon each salt and black pepper.
Place milk in a separate shallow dish.

In a third shallow dish or resealable plastic bag, combine parmesan, oats, garlic powder, onion powder. (I whizz this in the food processor for a few pulses) You can also add any spices you like here - sometimes we add some Italian seasoning, other times some chili powderif we feel like spicy, etc.

Dip chicken into flour and turn to coat.
Dip flour-coated chicken into milk and then transfer chicken to oat mixture.

Turn to coat chicken (or shake bag) until well covered with oat mixture.

Place chicken on prepared baking sheet and spray the top of chicken with cooking spray.

Bake 15 minutes, until crust is golden brown and chicken is cooked through. (I bake, then turn on the broiler for a few minutes)

I saw this recipe today and haven't tried it. Its for baked onion rings, but you could sub the tomatoes:

1 large onion
1/2 cup fiber one original cereal
1/4 cup liquid egg substitute
Optional: pepper, oregano, garlic powder, onion powder, etc.

Heat oven to 375. Slice onion into rings. Using food processor, grind Fiber One into bread crumb consistency. Pour into dish and mix in salt and any additional optional spices. Fill another bowl w/egg. One by one, coat onion slices first in egg, then in crumbs. Place on baking sheet sprayed with non stick spray. Bake 20-25 min. flipping rings over half way through.

Also - I have occasionally used whole, stone ground cornmeal. The one I use has 6g fiber per ounce, so twice as much fiber as whole wheat flour. Its still not technically "legal" and I would try the other options first, but all in all - it not like eating a donut or something.

I, too, am a fan of your chicken fingers and have made them a few times.
