I made the banana yogurt muffins yesterday.  I used ww flour and splenda.  They were very chewy and had a big artificial sweetner taste.  Would the pastry flour I've been reading about make this better and is there something else legal to sweeten them with?

Yes, pastry flour would make a big difference and make them less dense.

The pastry flour does add a better consistency; however, I was never in love with this recipe with the bananas.

How much agave nectar do you use to replace sugar in a recipe? I've been wanting to try it.

Searching the internet I found one site that said 3/4c agave = 1 c sugar, another said 1/4c agave= 1 c sugar, and yet another said to use 2/3- 3/4 less agave nectar than the original. I guess it depends on how sweet you like things. The only consistent info I found said to decrease the liquids in the recipe by the amount of agave nectar used. For example, below, in Joy's muffin recipe I did this:


Banana Yogurt Muffins


1 1/2 cups of whole wheat flour
3/4 cup Splenda

I will post a review of the peanutbutter ones when I make them. I think warm peanutbutter muffins sound like such an amazing treat :-)

NYC is good. It's a typical summer here, hot and humid!! It's actually one of my least favorite times in the city, and I am looking very forward to fall :-)

Your profile says you are in Spain? That must be amazing. I can understand getting homesick. My family is in Ohio and I get homesick all the time, so I can't imagine being that far away.

Thanks again for your help. I am excited to try the agave nectar, since my stomach does better if I stay away from too many fake sugars.

Hi Jen - I use ww pastry flour and Splenda in mine and they are usually delicious.
