DH and I have been on the SBD for about 7 months now and have done great! However, during the past few weeks I feel like I'm making the same thing over and over again and I'm bored. I'm looking for some inspiration! So....
My question to you all is what is your all-time, absolute favorite SBD recipe?





Here's mine:
Chicken
One of the favorites, and DH likes it too, is chicken cacciatore.
My husband really loves the chicken jambalaya recipe in the Quick and Easy cookbook. He always requests it when he tailgates for football season. I also really like the mini greek meatballs (same book).

Its really almost impossible for me to a "favorite" since in 3.5 years I have literally tried 100's of recipes. We generally try at least 2-3 new ones each week, some we never make again, others we make occasionally, some regulary. Never felt bored at all, but I've always been pretty adventurous with my cooking and we've always tried new recipes frequently.
Made this earlier this week, Its one of our all time favorites, we probably do it every other week or so:
Caribbean Chicken with Black Beans, Sweet Potato and Lime
Phase: 2
2 tsp. oil (olive oil)
1 medium onion, chopped
1 medium sweet potato, cut into 1/2 inch cubes
4 tsp. Caribbean jerk seasoning ()
1 cup reduced sodium chicken broth
2 bay leaves or 1/2 tsp. Old Bay seasoning
4 boneless, skinless chicken breast halves (1-1 1/4 lbs.)
1 lime
1 15 1/2 oz. can black beans, drained and rinsed
1/4 tsp. salt, or to taste
1. Sprinkle 2 tsp of seasoning over both sides of chicken. Heat a large deep skillet. Add oil, then chicken. Sear until golden brown on each side (don't worry about cooking through).
Remove chicken, add onion and sautee until translucent. Add sweet potato, the rest of the seasoning,chicken broth, bay leaf. Add chicken back to pan, bring to boil, reduce to simmer, cover and cook 20min. (until chicken is cooked through and sweet potatoes are tender)
3. Grate enough lime zest to measure 1/2 tsp.; cut lime into wedges. Stir zest, black
beans and salt into the sweet potato mixture. Continue cooking for 4 to 5 minutes til
potatoes are tender. If bay leaves have been used, remove them before serving. Transfer
sweet potato mixture to four plates; top with chicken and serve with lime wedges.
Garnish with dollop of FF sour cream, lime wedges and chopped cilantro.
This is my "go to" recipe that I always make to take to potlucks, when we have friends over for a BBQ, etc:
Chicken Satay Skewers w/dipping sauce
6 boneless chicken breast
1/4 cup soy sauce
1/4 olive oil
1/4 cup splenda
1/4 cup cilantro
3 T sf ketchup
2 garlic cloves
2 scallions, sliced
Cut chicken into 1/4in thick slices. Mix other ingredients in food processor for marinade. Place marinade and chicken in ziploc bag and marinade for 1hr. Remove chicken and thread onto skewers. Grill or broil and serve with peanut dipping sauce.
PEANUT DIPPING SAUCE
1/3 cup smooth peanut butter
1 garlic clove
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 tablespoon sugar ( or Use substitute)
1/3 cup water
In a blender blend together the peanut butter, the garlic, the lime juice, the soy sauce, the sugar, the water, and salt and pepper to taste until the mixture is smooth and transfer the sauce to a bowl. The sauce may be made 2 days in advance and kept covered and chilled.
Makes about 1 cup
