Stuffed Mushroom Dip
Ingredients:
1 Tbsp. butter substitute
1 lb. mushrooms, finely chopped
1 red pepper, finely chopped
1 clove garlic, minced
2 Tbsp. grated parmesan cheese
2 Tbsp. light sour cream
Melt butter substitute in large nonstick skillet on medium-high heat. Add mushrooms, peppers and garlic; cook 8 min. or until peppers are tender and liquid is evaporated, stirring occasionally. Remove from heat. Stir in cheese and sour cream until well blended. Serve warm with crackers.
