Roasted Garlic and Lemon Grilled Chicken

We had a few people over for a BBQ tonight and served this - it was a HUGE hit. We served it along with grilled radicchio drizzled w/balsamic vinegar and a strawberry spinach salad.
2 heads garlic
8 sprigs fresh tyme
4 lemons
1/2 cup olive oil
salt and pepper
4 boneless, skinless chicken breasts
Slice tops of heads of garlic, place on sheet of tin foil, drizzle w/olive oil, salt, top with 2 sprigs of thyme. Wrap up foil and roast in 400 degree oven for 45min.
Squeeze roasted garlic into food processor. Add juice of 2 lemons, leaves from remaining 6 sprigs of time, 1/2 cup olive oil, salt and pepper. Puree into a thick paste.
Reserve half of sauce/paste, use the remaining to marinade chicken for 1 hr. Grill chicken, brushing with remaining sauce a few times during grilling (save a little for drizzling over chicken after you plate it)
Grill lemon slices from two remaining lemons to use as garnish on top of chicken.







We made this last weekend for company, and it was a huge hit.
