green beans with thai-style sesame sauce


A play on green beans in peanut sauce, this is a tantalizing salad your whole family will love. If you have no digestive problems, enliven to taste with crushed hot red pepper.


Servings: Makes 3 or 4 servings.




Ingredients1/2 pound green beans, preferably small, cut into 1-inch lengths
2 tablespoons natural peanut butter
1 tablespoon Asian sesame oil
1 tablespoon rice vinegar
2 teaspoons honey (agave nectar)
1 1/2 teaspoons tamari
1 teaspoon grated fresh ginger




Preparation1. Steam the green beans over boiling water until just tender.

2. In a medium bowl, blend together the peanut butter, sesame oil, vinegar, agave, tamari, and ginger. Add the beans and toss to coat. Serve at room temperature.

I think tamari is a type of soy sauce so you could probably just substitute it next time.

I bought a bottle of tamari (low sodium) to try last month. I personally can't tell the difference between it and regular low sodium soy sauce.
