A Surprising Superfood

You might think of this superfood as holiday fare, but surprise—pumpkin is actually a fantastic weight-loss gem! Plain old canned pumpkin is just brimming with fiber, and at a mere 40 calories a serving, it's one of the ultimate diet do's. So, just how do you fix up pumpkin when it's not for the Thanksgiving table? Try this:

Sweeten it with your favorite low- or zero-calorie sweetener, then sprinkle on some cinnamon and nutmeg (good sources for lowering blood sugar) for good measure, and top it off with some healthy almonds for one of the best-tasting weight-loss treats around. It's filling and delicious.

1/2 cup of pumpkin counts as a grain serving.

Interesting... why is pumpkin considered a grain?

Thank you for sharing...I hadn't even thought of having pumpkin as a sweet treat since I have been on the beach. I like mine with cinnamon and cloves. Once I made a SF pumpkin pie without the crust and it was yummy ....Didn't miss the crust at all. Pumpkin will be on my grocery list this week.
