1 pound baby bok choy
2 tablespoons olive oil
¼ teaspoon ground cardamom
1 cup chicken broth
2 tablespoons olive oil

1. To clean the bok choy leaving the head whole, rinse in several changes of water.
2. Hold the leaves away from the stem and run cold water through the bok choy to remove any dirt. Pat dry with paper towels.
3. Heat the oil in a large, nonstick frying pan. Sauté the bok choy for 10 minutes, turning frequently.
4. Add the broth to the pan and cover. Simmer for seven additional minutes.
5. Remove to a colander with tongs and allow to drain.
6. Serve hot.
