Nut Crusted Tilapia with Mango Puree

1 mango pureed with sugar substitute and water
4 fresh tilapia filets
Sea salt and cracked pepper
Flour to dredge fish
2 tbls. milk and 2 beaten eggs for egg wash
1/4 cup chopped pine nuts and 1/4 cup chopped pecans




1. Puree your mango with a pinch of sugar substitute and water until desired consistency set aside.

2. Season your filets with salt and pepper, lightly dredge in flour and brush on egg wash.

3. Dip fish into crushed nut mixture and place nut side down in a medium heated saute pan with olive oil. Lightly brown the one side and flip over and finish filets over medium low heat until fish is flaky. About 3 minutes on each side for thinner filets.

4. Paint your plate with the mango puree and place a dollop of your favorite whipped sweet potatoes in the middle and lean the fish on top of the potatoes. Add some sauteed green beans next to fish.
