Coconut Chicken on Skewers

Here's a recipe that I made last night, was in the mood for coconut curry but dint want to have a heavy meal, we had guests over who also loved it. Served it with peanut sauce:

Chicken Breast (made 6 pounds) cut into 3 inch cubes
1can of coconut milk- LF
thai green curry paste, or red curry paste
lemon juice 2 tablespoons
sesame oil 1-2 tsp
salt as needed
pinch of cayenne or more:)

Mix all the spices into coconut milk and marinate overnight or a few hours. Soak bamboo skewers in water for a few hours and then skewer 3 pieces of chicken per skewer. Bar-b-que - each skewer requires abt 5 mins depending on how hot the grill is.

A tip that I learned from this board is, when using the low fat coconut milk, to add some Splenda to it, and it really brings out the flavor.
