1 tbsp peanut oil
1 medium onion, chopped
1 1/4 pounds medium shrimp
1 tbsp soy sauce
1 cup chopped celery
1 cup chopped red bell pepper
1 cup chopped broccoli
1/2 cup water or broth
1/2 tsp cornstarch mixed into 1 tsp cold water
2 cups cooked brown rice, for serving

1 1/4 pounds medium shrimp
1 tbsp soy sauce
1 cup chopped celery
1 cup chopped red bell pepper
1 cup chopped broccoli
1/2 cup water or broth
1/2 tsp cornstarch mixed into 1 tsp cold water
2 cups cooked brown rice, for serving
1. Heat oil in a wok or large skillet and stir-fry onion until it is translucent. Push the onion up the side of the wok, then add the shrimp, stirring until the tails curl (2 to 3 minutes). Add soy sauce and stir onions back in with the shrimp.
2. Remove shrimp and onions from the wok temporarily. Place the veggies into the wok and add the water (or broth). Cover and steam veggies for about 5 minutes. Add back in the shrimp and onions and add the cornstarch and water mixture to thicken. Stir for about 1 minute. Ready to serve.
