Decided to experiment today with a tried and true recipe..the one for Mexican Meatloaf!
Well, I made lots of little Mexican MEATBALLS, put them on a foil lined cookie sheet and baked them at 350*....not exactly sure of how long I baked them as I just kept watching them so they didn't burn or get overly browned. I did have to use a paper towel to soak up some of the excess moisture that baked out of them...but after they were done, I transfered them to another paper towel lined cookie sheet and let them cool.
So now I think I can either dip them in my homemade bean sauce/dip or just add them to lettuce salad, along with tomatoes, onions, beans, and olives to make a nice taco salad.
And I am thinking that next time I may just try using the Mexican Meatloaf recipe to make Mexican BURGERS.....same recipe..just different twist!
