I made this chile rellenos bake last night to plan and eat on for the next several breakfasts. I had some low fat mexican blend + some skim mozzarella, so that is what I used. Yummy!  Should be Phase 1 friendly.

I was surfing around over the weekend for new recipes to try, and I also found these on Kaylyn's blog- random! I made them Sunday night and portioned them for breakfast for the week. They are delicious! I added in some broccoli and green onions to up the veggie amount.

I keep putting this on my meal plan but when I go to the store I cannot find the chiles! I only found very small (4.25 oz.) cans of whole green chilis. I thought maybe I was reading the recipe wrong - it just didn't seem right that I would need 6 cans of them. Now I see that there are large cans....but where? I checked the international aisle too -- usually my store has everything.

Today I bought 2 4.25 cans. Is that enough for the recipe? Should I buy more of them? I plan to make it with ground turkey or beef as Joy did.

I actually ended up roasting my own poblano peppers, as I couldn't find the canned ones.

It sounds like I need to get more or roast my own. Are green chiles hot?
