I made this last night without the crust. It was really good. I didn't have lime jello, however, so I used strawberry jello and a sugar free strawberry banana sparkling drink I had and added a splash of lemon instead of lime. I will definitely make this again.

1 box sugar free lime jello (unmade) 1 box (8 oz) cream cheese - room temerature works best

1 cup boiling water

1 cup of very cold Fresca soda

good splash of lime juice or Key Lime juice

Dissolve jello and cream cheese in boiling water. (I used a hand mixer on low for about 2 minutes.)

Stir in Fresca and splash of lime. Pour into pie dish or individual custard cups. (if using "crust" recipe below - pour in prepared pie plate or dish.) Refrigerate until firm. Cups take about an hour / pie plate takes up to 3 hours to firm.

OPTIONAL CRUST:

1/2 cup crushed almonds (I pound to crumbs with a mallet)

melted butter

sprinkle of salt

Place crushed almonds and salt in a small bowl. With fork, add enough melted butter to form a crust like consistency. Spray bottom of pie plate or dish with a light coat of PAM or other non-stick spray. Press almond mixture evenly onto bottom of pie plate. Toast crust in oven for a few minutes (2-5) on 350 degrees. Be careful not to burn! I toast mine to a light golden brown. Let cool to room temperature before filling.
