Welcome!
Please don't get discouraged! Each week will be different. I know I had many weeks where I would lose like 2-3lbs then there were many weeks I lost like .2 or .6.. it all adds up!!
We are here for ya!
Ok, first - BREATHE!!

Are you doing this online or are you going to meetings?

Vanessa is correct.
I believe planning is the key. Even if you don't know everything your going to eat in a day, it's good to have the "bones" to work with, then fit your snacks in around that. Especially when you get to the lower point ranges, planning and journaling is essential.
You asked about computing your body fat. There are calculators online that will compute your BMI (body mass index). The ones online are fairly general -- they just take into consideration your height, weight and sex. You can also have it done by a doctor or one of the trainers if you go to a gym. They use calipers to measure the fat on different parts of your body (your back, arms and ... somewhere else I can't remember!). There are more accuate ways but they are really heavy-duty -- dunking in a tank of water, things like that.
Weight watchers has a "target weight range", but personally, I base my goals on my BMI. I want to be considered not overweight, then I'll go from there.
Just to give my thumbs up to the other posters, please eat your minimum points, and if you exercise you can also eat those points (or not, it's your choice). I am a huge advocate of exercise. Even though you can do ww without it, I think people look sooooo much better with some muscle under their skinny arms! Also, the more muscle you build, the more fat your body burns when you're not working out. Just remember to keep everything in moderation. Overworking yourself will only cause burnout, and that's no fun either.
Good luck!
