So I'm eating take-out from Boston Market for dinner tonight (they specialize in rotisserie chicken dinners that come with various different sides; I got mashed potatoes and green beans).

I can't explain it. But I think really good potatoes, whether they start out as flakes or real potatoes...are the BEST with real cream and butter and salt...not milk, not half and half and not water...but REAL cream.

I wonder if it depends on the restaurant...like if its a 4 or 5 star upper class restaurant with tops chefs. I cant imagine those guys would go to culinary school for years to study the art of cuisine only to have Idaho potato flakes in his kitchen. Maybe they have someone that just peels and makes the different varieties of potatoes. My friends husband was the "Sauce Guy" at this one restaurant and thats all he did all day was make sauces. Food industry is fascinating I think. Even the dishwashers at those places make good money.

How funny! I knew a "sauce guy" too. I don't think that's what he was really called at the restaurant but he made all the sauces from appetizer dips to pasta sauces to dessert sauces. So strange! Hmmm, I should stop into a local 5-star and see if they have a position open for "sauce tester".

While I can't be your "mad scientist" and give you the what is actually in those "mashed taters" I can only say perhaps it's a shame that no one has time to make them from scratch anymore. Having eaten at many a take out place I can only say this. For the amount you spend on a one person meal I prefer doing a lot of ahead work so I can do the cooking instead. I also find it to be just more to my liking when I know what went into the "food" as it were and I sort of like my health too. I think if places like those had to disclose the facts (nutritional) under oath you would see a great difference in the numbers. Personally I would cook something for you but as a countrygurl it probably would not be to your taste.
