I made this fabulous "fancy" macaroni and cheese with proscuitto and parmesan and provolone cheese rather than with cheddar that I got out of country house magazine. It was really good and it would be something you could serve at a dinner party, you made with ditani pasta which is really small and you baked it in ramekins (I baked mine family style in a 13x9 pan) but for individual servings you do it in the ramekins which is why you use the small little pastas. It was delicious.

2 - The dinner sounds absolutely delicious, and can I ask, as I come from the UK: when you say 'baked chicken' you mean as in, put the whole chicken in the the oven (in a roasting tray) and roast it till it's crispy, juicy etc.. ready? And what is ranch dressing when it's at home?

When I make meatballs, I use 1/3 ground beef, 1/3 ground pork and 1/3 ground veal. Makes the most delish meatballs.

Let's see...last night I made yankee pot roast for dinner and Monday night I did meat loaf. Tonight I think I got pork chops out. I bake them with chutney spread all over them - yum!

Like sisfox, I use veal and pork along with the beef in my meatballs. You should try it sometime and see if ya like it although, I'm sure yours are delish as they are : )

One of my favorite easy meals is rolled parmesan chicken. Thaw 8 boned chicken breast halves, season with salt and pepper, take 3/4 c parmesan (not the dry finely grated kind) cheese and combine it with 3/4 c of Ritz cracker crumbs, dip each chicken breast into 1/2 cup melted butter or margarine, then roll in cheese mixture. Place in greased ovenware, sprinkle extra cheese over the top and bake at 350 for 30 to 40 mins. Yum! As I'm sure you're aware, this isn't a low cal meal ; )

Actually, it was boneless chicken breasts that I baked, not the whole chicken. Ranch is a type of creamy salad dressing.

My ex's father used to make meatballs that way, too, and they were definitely yummy!

Hey, IMO, butter is much better than margarine. I always go for the real stuff, not the imitation!
