Clams Casino Stuffed Mushrooms

24 mushroom caps
cayenne pepper to taste
4 slices of bacon, chopped
4 oz. (1 stick) unsalted butter
2-3 cloves garlic, minced or smashed to a paste
2 TBL green bell pepper, finely minced
2 TBL red bell pepper, finely minced
1 ½ cups breadcrumbs, made from fresh or day-old bread
1 6-oz. can of clams, chopped so that pieces aren't more than
1/3" long, juices from the can reserved

Prepare mushroom caps as in the recipe above, sprinkling lightly with cayenne pepper.

In a large sauté pan over medium heat, cook the chopped bacon until it renders it’s fat and the bacon is well cooked but not too crisp. Remove bacon bits from pan with slotted spoon and place into a bowl. Drain away the bacon fat from the pan and return the pan to heat. Place the butter and garlic into the pan and cook until the butter melts and the garlic scents the room. Add the green and red bell peppers and sauté until they are soft but the garlic is not browned, about 4 minutes. Add the breadcrumbs and stir until they are coated with the melted butter. Add the clams, the juice from the can of clams, and the reserved bacon and mix well.

Divide the mixture evenly between the mushroom caps. Bake in a moderately-hot oven (400F) for 20-25 minutes, or until the stuffing is golden brown on top.
