Caramelized Onion Soup


3C sliced onions


1/2teas. cayenne pepper


1/2teas. paprika


2TBS. oil


1TBS. brown sugar


1TBS. flour


4C chicken broth


1/4C white wine


1/4 shredded Gruyere cheese


1TBS. chopped parsley


In saucepan cook onion, cayenne and paprika in oil until onions are tender. Sprinkle brown sugar and cook a couple of minutes until onion are golden. Add broth, wine and heat until hot. Top with cheese and parsley.

This sounds yummy to me, as long as I remember to take my Zantac! LOL.

I'm going to use apple cider or apple juice instead of white wine. My doctor said I must eat more root vegetables, except for white potatoes so am on a quest for recipes. Will search and post as much as I can.

Hi Ivy nice to see you! No problem changing the white wine, I hardly ever have any wine in the house and often use something else. The amount is so little that you could even use water or chicken broth.
