Found this in Taste of Home's Quick cooking, looked yummy and hoping to try it this weekend.


Pepper Jack Stuffed Chicken (Recipe from Taste of Home's)


Ready in 45 minutes or less


2 ounces pepper Jack cheese
2 boneless skinless chicken breast halves
1 teaspoon Mexican or taco seasoning
1 tablespoon vegetable oil

Sounds yummy to me! I have done miy chicken cordon bleu casserole using pepper jack, it is great in that too. Of course for DD I have to use plain jack in hers. If there is anyone who doesn't want to brown it first in oil, I think they could probably just put it in the baking dish and sprinkle some bread crumbs mixed with a little melted margarine or butter on top.

Sounds great to me even if I have to sub the cheese. I do have chicken in the freezer, still waiting on parts from the repair guy so the more I use up the merrier. Ok that's it, just went and pulled out some chicken breast fillets to thaw. Not sure how many for dinner tonight, but I will be prepared. I do have the seasoning but will probably add extra cumin. Thanks for posting Kim.
