Need some winter veggie ideas

Miksi and I need some help with ideas for winter veggies!!!
During the winter here it is so hard to get good and fresh veggies.. and not have to chop off an arm and leg to pay for them..
We can get all the normal stuff.. but things like tomatoes and cucumbers don't taste good or are very unripe at the store or are just plain ol' nasty!
I eat more fruits and veggies than Miksi..but it is hard to get him to eat them. He doesn't like veggies canned..
Carrots aren't sweet and yummy in the winter and Miksi won't eat them cooked. I might be able to get him to eat them slightly steamed.
Help! We need suggestions and ideas to be healthy (in the body, the mind is a lost cause) people!

Butternut squash is my very favorite squash ever!
But I do know there is sweet potatoes..but those don't have so much in the way of vitamins..
Wish I could plant the seeds.. I just don't have much in the way of space to grow them..and the balcony gets infested with aphids.. That's enough to make me squeal like a girl.. and I just don't do that!

Sweet potatoes aren't so bad in the nutrition department:
Many people eat sweet potatoes only on Thanksgiving, and that's a shame, since they're among the most nutritious of vegetables. Their bright color is a key to their high beta-carotene content, and they also contain the carotenoids lutein and zeaxanthin. Eaten with the skin, a baked sweet potato is an excellent fiber source (about half of which is soluble). And these naturally sweet treats supply substantial amounts of vitamins C and B6, and manganese, as well as a small amount of potassium.
I can't wait to see if they do have it at the stores!
