Hi Kids:

I was wondering if anyone would have any comfort food recipes,that they would be willing to post for me?? I will make a short list of some comfort food recipes,and if you have any recipes for these,please post them!! Thank you very much!! Winnie *BLUSHES* Here are the recipes that I would like to have:

Salsbury steak or Swiss steak,what is the difference between these two things anyway?? If anyone has recipes for both of these dishes,please post them!! *SMILE*

Chicken Fried steak with gravy

Meatloaf

Onion Rings

Pasta salad recipes

Hamburger gravy

Sausage gravy

Beef stew

Chicken pot pie

Eskimo chicken pot pie

4 servings
Ready in: 30-60 min

1 package (10 oz. size) frozen peas and carrots
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cup chicken broth
2/3 cup milk
3 cups cut up cooked chicken
1 Pastry for 9-inch two-crust pie
Directions:

Rinse frozen peas and carrots in cold water to separate; drain and set aside.

Pre-heat oven to 425 degrees.

Melt butter in 2-quart saucepan over medium heat. Stir in flour, onion, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken and peas and carrots; remove from heat.

Prepare pastry. Roll 2/3 of the pastry into a 13 inch square. Ease into ungreased square 9 X 9 pan. Pour chicken mixture into pastry-lined pan. Roll remaining pastry into 11 inch square. Cut out designs with 1 inch cookie cutter. Place square over chicken mixture. Arrange cutouts on top of pastry. Turn edges of pastry under and flute.

Bake about 35 minutes or until golden brown and chicken filling is bubbling.

CHICKEN FRIED STEAK
with mashed potatoes and biscuits

TO PREPARE THE STEAK:

Use 2 pound round steak, 1/2 to 3/4 inch thick. Ask butcher to tenderize or pound it thoroughly on both sides with meat-tenderizing mallet. Trim off fat. Cut into pieces 5 to 6 inches in diameter. Flour each piece thoroughly and shake off excess. Dip in Chicken Fried Steak Batter (see below for recipe), drain, then flour it again. Use deep fry pan half-filled with a good brand of vegetable oil. Preheat oil to 325 degrees. Cook meat 7 to 10 minutes or until golden brown.

TO PREPARE CHICKEN FRIED STEAK BATTER:

2 tbsp. sugar
1/2 tsp. salt
2 eggs
1 tbsp. baking powder
1 c. milk

Mix the first four ingredients with half the milk and stir until smooth. Add remainder of milk and mix well.

TO PREPARE THE GRAVY:

In pan where you fried the steak, gradually add one cup of flour and approximately 1/2 stick of butter. Slowly add up to 8 cups milk, stirring constantly until desired thickness is obtained. Remove from heat and add salt and pepper to taste. Serve Chicken Fried Steak with mashed potatoes and biscuits.

BISCUIT RECIPE:

2 c. flour
1 tsp. salt
3 tsp. baking powder
5 tbsp. butter
3/4 c. milk

Sift all dry ingredients into a bowl. Cut in butter until mixture looks like coarse cornmeal. Add milk and mix well. Knead dough, roll and cut. Bake at 425 degrees for 12 to 15 minutes.
Set the table!
We're ready to eat dinner!!

EASY ONION RINGS

2-3 lg. onions, sliced into rings
3/4 c. cornstarch
1/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. water
1 egg, beaten

Mix together well, all of the above except onions. Dip onion rings a few at a time in batter and fry in 1 3/4 inch of heated oil in large frying pan or deep fryer. Fry until golden brown, and drain on paper towels.

Easy Sausage or Hamburger Gravy

Crumble and brown a pound of sausage/hamburger. Just before it gets done put 2 cups milk and 2 T flour in your blender for a few seconds. Pour this into sausage/hb and stir till thick.

If you use mild sausage you might want to add salt & pepper.
or jazz it up with steak sauce, tabasto or whatever your mood fits the day!!

Chicken Fricassee with Dumplings

4 to 6 pounds chicken parts
1 large onion, peeled and sliced
1 cup chopped celery with leaves
1 tablespoon salt
1/8 teaspoon pepper
2 1/3 cups water, divided
1/4 cup all-purpose flour

Dumplings, below

Place chicken parts, onion, chopped celery, salt, pepper, and 2 cups water in a Dutch oven or large kettle.

Cover and bring to boil; reduce heat and simmer for 45 minutes, or until chicken is tender.

Remove chicken from broth; set aside until cool enough to handle. Pick meat from bones.

Strain broth into a 4-cup measure; add water to make 4 cups.

Press vegetables through sieve or through food mill into broth.

Return broth to the pot and bring to a boil.

Stir about 1/3 cup water into the 1/4 cup flour to make a smooth paste. Gradually stir the flour paste into the hot broth.

Continue cooking, stirring constantly, until thickened and bubbly.

Return chicken to pot; heat to boiling over medium heat.

Prepare dumplings:
Sift flour, baking powder, salt, and paprika into a mixing bowl; cut in shortening. Stir in milk just until dry ingredients are moistened.

Drop dumpling batter in about 6 to 8 portions over chicken.

Cook, covered, for 20 minutes.

If desired, sprinkle dumplings with additional paprika and chopped parsley.

Chicken fricassee serves 6.
Pour the wine and
pass the napkins!!

I just wanted to say,"Thank you,"to shiny bubbles for posting all of those recipes!! I appreciate all of the recipes that you posted for me so much!! *Hugs shiny bubbles and smiles* I didn't know that you were the CL for the comfort food message board Karen! I am sorry to hear that they got rid of you on there,because you went off of the topic. I appreciate your red beans and rice recipe so much,it sounds GREAT!! Thank you and shiny bubbles again for all of your help!! I also agree that casseroles are one of my favorite comfort foods too!! Chicken pot pie,tuna noodle casserole,YUMMY!! Winnie *SMILES*
