good - and easy - salad recipe/dressing?

hey there,
I'm new to to these forums. I registered here cause I want to get into cooking - and I think here are the people that can help me :) Having moved out things get - well let's say things are not so easy anymore when you have to cook for yourself instead of just having to sit down at the table ;)
So, I want to make myself a good salat sometimes. I don't want it to be a "boring" one though - you know only the salad with the dressing. Are there any easy but somehow special variations that I could try out? And also, are there any easy selfmade dressings to fit with them? I don't really want to buy a dressing cause they don't fit my taste too often.
I also made a blog about recipes (http://lostchef.hobbies.homepagenow.com) - well not really a blog it seems that you get some all-in-one solution there - that I want to fill up with some content soon. If I would be allowed to use the recipes that anyone here can contribute it would be great :)

Well easy salad dressing, I'll often do one with 1 cup sour cream or creme friach

Yo, don't diss the iceberg lettuce, it can be used
We did that in the supper clubs I managed in the 70's.
Iceberg lettuce has it use but not as the main lettuce in a salad, it great for giving crunch
We eat a lot of salad and I always make my own dressings.
For a Ceasar type dressing I use the juice of 1/2 a lemon, 1 clove of garlic crushed, 1 egg yolk and 2 or 3 tablespoons of olive oil, salt and freshly craxcked pepper to taste and a teaspoon of Dijon mustard. Whisk this all together and serve with fresh pieces of Romaine lettuce. If you like you can add some anchovy paste to this and a handful of croutons.
I also like equal parts of good balsamic vinegar and olive oil with fresh pepper and salt.
This is superb on the mesclun mix leaves that you can get at the grocery store.
For a baby spinach salad or one using chicory or draker greensi like to add a few mushrooms, very thinly sliced red onion and some madarin orange. For that I use olive oil, rice wine vinegar or raspberry vinegar and a drizzle of real maple syrup!
