good - and easy - salad recipe/dressing?

hey there,
I'm new to to these forums. I registered here cause I want to get into cooking - and I think here are the people that can help me :) Having moved out things get - well let's say things are not so easy anymore when you have to cook for yourself instead of just having to sit down at the table ;)
So, I want to make myself a good salat sometimes. I don't want it to be a "boring" one though - you know only the salad with the dressing. Are there any easy but somehow special variations that I could try out? And also, are there any easy selfmade dressings to fit with them? I don't really want to buy a dressing cause they don't fit my taste too often.
I also made a blog about recipes (http://lostchef.hobbies.homepagenow.com) - well not really a blog it seems that you get some all-in-one solution there - that I want to fill up with some content soon. If I would be allowed to use the recipes that anyone here can contribute it would be great :)

I got a peppermill, and I agree that it is useful in many ways. The only real problem I have is with my kitchen being really small...if you can even call it a kitchen...and it get's no direct daylight. Wonder who planned this...it's not so much fun to cook there. And it's too small for two people standing there and cook together...*sigh*
Another thing: have any of you thought about a cooking blog, where you (or we) as a group could post recipes? I do like my recipe blog very much, but it has very little content yet. I would love to build up a base of things that I could try out. And I got the opportunity to grant posting rights to other people. You all seem to know so much more about cooking than I do so it could grow pretty fast :)
edit: forgot to mention that I LOVE the taste of dried tomatoes :)

I am writing a cookbook in Sweden and I used to have a cooking blog in Swedish and I am trying to get frugal Board going with messages called The daily dinner since I once had the daily Porridge there and it was about breakfast.
Sadly the Daily dinner isn't up and running, I got

yeah I do have a freezer. If I can manage to cook a rather big amount of food at once I wouldn't have anything against freezing it for later :) the swedish army really has tasty food?`;)

I'm a big salad fan, but I'm the only one in my house that adds anything to the greens others that carrots, cucumbers and tomatoes.
I have done that too and it worked well.
I've loved reading all the recipes for dressings!!
I use canola oil if I don't want to much flavor
Another thing I do to cut the fat in my diet is to top my salad with fresh salsa.
