I've made lots of chili. Sometimes I'll wash and sort the beans, other times I'll open a few cans of beans. You can use pinto, black, kidney, or small red beans. I think the key is to serve hot cornbread with it.
On this one, you can use tomato sauce, canned whole tomatoes or anything in between.
Black Bean Chili with Beef
1/2 pound lean ground beef 1 large onion, diced 2 (15-ounce) cans black beans 1 (28-ounce) can tomato puree 1 (15-ounce) can corn, drained 1 tablespoon chili powder 1 teaspoon ground cumin 1/2 teaspoon ground black pepper
1. Preheat a deep skillet over medium-high heat. Brown beef until no longer pink, about 5 minutes. Drain. 2. Add onion and sauté until soft, about 5 minutes. Add beans (undrained), tomato purée, corn, chili powder, cumin and pepper. Bring to a boil, cover and lower heat; simmer gently for 10 minutes until thoroughly heated.

I like my chili hot but never buy it that way because the hunny has trouble eating spicy food.

When I was a kid, we made a recipe similar to that, after we left Taxas & found that you could not get tamales in Georgia (yet).
