It's our usual holiday dinner -- ham, yams, that special jello, and pies. I'll do a birthday cake for SiL since that's really close.
I'm trying to convince myself that one angel food cake and one lime meringue pie is enough dessert for ten people. I think I'll be doing a berry pie also.
Ingredients: pastry dough 2 pints blueberries juice of 1/2 lemon 1 tablespoon sugar milk or egg yolk for -- glazing the pastry
Cooking Directions:
Make the pastry dough and chill it. Preheat the oven to 350 degrees. Meanwhile, place the blueberries in a pan over medium heat with the lemon juice and sugar. Cook until soft, tasting for sweetness. If there is too much juice, pour some off and save it to make a fruit sauce later. Roll out the pastry dough into a circle an inch larger than a 9-inch cast-iron or enameled cast-iron skillet. Place the circle on top of the pan and press down the edges with the blade of a butter knife. Brush with milk or egg yolk and bake for 20 to 30 minutes, or until the pastry is golden brown.
This is a LOT like my blueberry pie at the restaurants.
We are just having something simple since we don't have any family around this way since my parents have passed on! I am going to be fixing cheeseburgers,fries and homemade chocolate chip cookies for dessert! People look at me really weird when I tell them that we have Non-Traditional foods for Easter,because why go through all of that hard work when my family doesn't care that much for ham anyway? Plus,I LOVE to be able to spend time with my DD as she is seven years old and I am cherishing every waking moment with her because she is growing up so fast!! I treasure every holiday that I spend with her because I know that pretty soon she is going to be a teenager,and I will miss the years when she was a little girl,standing on her tippy toes helping me to cook in the kitchen!! ;-)
I do miss the great big Easter dinners that my mom,grandma,or aunts used to prepare because there was so much food,that it was just unbelieveable! I really miss my mom's cooking especially her homemade apple pies,and her homemade beef stew over biscuits! I would like to wish everyone a very safe and Happy Easter!! (((LOTS AND LOTS OF HUGS)))) Winnie *SMILE* ;-)
With luck, I can get Yy2's grandmothers to do the important sewing. I put both my sewing machines in storage when we moved to Hawaii, and I'm hoping never to see either of them again. The sewing part of home ec was pretty traumatic for me.
