Hello,

I know that this is my first post and I sure hope that it is in the right area. I have been getting some cool recipes out of Country Living for a while now, but there is one that I have that I just don't understand. The measurements are foreign to me and I need help breaking it down. It doesn't help that I am not that experienced either.....:)

It's really just bread. But looks like this:

(Sorry about the formatting, it looks right when I type it but the preview is all messed up)

I guess what I need to know is how to figure out the measurements into terms that I can understand with just me and a measuring cup. I have no idea what .600 of a quart is, you know.

And lastly, I know that you can bake apples and I have heard that the way to do it is to fry them in brown sugar ? Is that right ? Does anyone have any tips for that? I mean do you just immerse them in water and brown sugar and fry ? Or dip them in a little or what ? I guess that is if they don't already come in a can like it says, I have never seen them though.

MY! That's FANTASTIC! Thank you so much for not only taking the time to respond but to also break it down like that in so many ways. And all the extra tips!

You're right about it coming from a commercial place (I didn't say it right before-sorry) A buddy of mine cooks in this state facility and he had some of it. I don't see him that much so I asked for the recipe....and from what you said I guess he delivered the absolute process. :D

Oh yeah! It's supposed to be Apple Bread. It was about 1 inch or maybe just a little more thick and the center was not uncooked, but it was kind of gooey after you started chewing it. Like dough....sorta. It wasn't really "complex" but it was good.

Although this recipe did not come from Country Living I do have some other things that I want to try that did. So I'm sure that I will be back......in addition to butchering your ingredients in the kitchen.

There are also the steps for mixing all of the original measurements. Would that help make anymore sense?

Hehe, I love it when a plan comes together...Yes, let me know the recipe instructions, but I can already tell you, this is just like basic banana bread.

Hello again,

(you were right):)

Steps:
1. Cream sugar and shortening until fluffy, about 10 minutes. Using a flat beater.
2. Add eggs slowly to creamed mixture. Mix until blended. Scrape sides of bowl.
3. Combine dry ingredients.
4. Add water and vanilla alternately with dry ingredients to creamed mixture. Do not over mix. Fold in chopped apples and cinnamon.
5. Grease bottoms of muffin pans. Portion batter into pans with no.12 dipper. If using sheet pans pour 1.00 gallons per pan. Cut 6 x 9. Serve 1 each.
6. Bake at 350F for 18 - 20 minutes.
7. Hold for service.
8. Leftovers should be minimal.

It sounds like you are pretty well connected and thoroughly knowledgeable in the culinary arts. Thanks for the Apple stuff also, that is above and beyond what I expected. So you are from "Tennessippi" eh? Interesting :D I am on extended leave visiting some of my family in Georgia but originally from California. So now you know where the rare cooking comes from.....lotta beach, not much else but beach, traffic. LOL. Not much cooking.

You core Apples with a "corer" right! I learned that today.

#12 scoop..refers to ice cream...12 scoops that size per quart.

You know something else that I am trying to "master" is making my own wine. Of course that is if you want to call it that, it's rather more like I am trying to create a "train wreck" in my kitchen. I've already had one go !KA-BOOM! on me. I didn't know what I was doing and was just experimenting. LOL.

Banana bread is awesome!! I've been thinking of making it lately, but I'm also trying to cut down on my baking.. eating all the stuff I bake is starting to take its toll. LOL

I love being able to freeze my uneaten bananas and the use them for banana bread. The best way to use overripe and very sweet ones.

I also haven't had baked apples in ages.. I should ask my DH if he would be willing to make them for us. That's one of his specialties, along with Stroganoff.
And I like to keep it that way.. it's sweet when he bakes/cooks!
