I've been recently dieting, so you know what that means, more greens. I would love to know what is everybody's favorite salad recipe. I've been stuck on this one:

* 4 Chicken Breast, skinless & boneless
* 1 cup Blackberries
* 1/2 cup Walnuts
* 16 oz. Gourmet Greens Salad Mix
* 16 oz. of Champagne Salad Dressing

Instructions

1. Place chicken breast in an oven safe pan.
2. Cook at 350 in oven until done.
3. Cut into strips. Place on gourmet greens salad bed with fresh blackberries and shelled walnut pieces.
4. Pour the Champagne salad dressing over the salad and serve.

my favorite is the chopped chicken salad served at Tucci Benucch - if I am able to duplicate completely I will send the recipe.

But my favorite at home recipe is:
1 head Nappa/Chinese cabbage, slawed
1/2 cup Red onion, diced

1/2 cup sunflower seeds
1 pkg almonds, slivered
2 pkgs Roman noodles, Chinese flavor, crushed

Place on jelly roll pan and bake until lightly browned in a 400 degree oven.

3/4 cup salad oil
1/2 cup sugar
1/2 cup vinegar
2 TBSPS soy sauce

Mix the sugar, vinegar, oil, and soy sauce until well blended.

Just before serving; mix the three separate mixtures together.

Makes 4 dinner sized servings.

Hope you enjoy. All of the ingredients can easily be adjusted. I have a friend who even used a sugar substitute and she enjoyed this salad.

Add some couscous to your salad!!

One of my favorites is couscous, corn kernels, tomato, cucumber, a bit of lemon juice, drizzle of oil (veg or olive), avocado and anything else that you like!
Very light and yummy!

I'm not much for putting (sweet) fruits into my salads..they belong in a separate 'salad'. But that's just me. :) I do love putting jalopeños in my salad at times and pesto makes a great salad dressing. Sun flower seeds are yummy too.

A friend makes a very fresh Summer Salad:
lettuce, fresh basil, tomato, green onions, olive oil, corn, freshly ground pepper, salt, a bit of vinegar.
Eat at once, this doesn't store well.

I eat large amount of salad and I use Iceberg lettuce cause right now it has the best flavor and yes it do have a flavor.


I don't have a favorite salad but I don't like my salad to be ice cold

My absolute favorite salad is the lettuce/cauliflower/sweet mayo/bacon layer salad. However, I tried this new one the other day and it was delicious.

Napa Salad

1 head napa Cabbage
2 bunches green onions
2 pkg ramen noodles
2 small pkg slivered almonds
1/2 container sesame seeds

Brown broken up pieces of ramen noodles, almonds & sesame seeds in 1/2 c margarine.
Drain on paper towel.
Break up cabbage, chop onions and mix all ingredients together with dressing.

Dressing:
3/4 c oil
1/2 c vinegar
3 T soy sauce
1/2 c sugar
Mix well and boil for 1 minute.
Pour over salad right before serving.

Note: Leftovers will be wilted. I just add fresh salad or spinach leaves and mix in with the leftovers to pep it back up the next day.

This one is my all time favourite! Okay, its not that healthy, with all the dressing, but it tastes good!!
Oriental Fried Noodle Salad
Make this salad for your next barbecue. Everyone will be asking you for the recipe. This salad has an interesting Chinese flavour combined with crunchy fried noodles and nuts.

Preparation time: 10 minutes
Serves 8
Degree of difficulty: easy

½ -1 Chinese Cabbage, or ¼ savoy cabbage (shredded finely)
6 Green Onion (chopped 5mm length)
100g Lightly roasted slivered Almonds or Pinenuts
1 pkt Chang’s Fried Noodles 100g (Original or Onion Flavoured)

Dressing:

¼ cup White Vinegar
1/4 cup Castor Sugar
1 tblsp Chang’s Soy Sauce
2 tsp Chang’s sesame oil (Optional)
½ cup Olive Oil

Mix all the ingredients of the Dressing in a bowl. Stir well until sugar is dissolved. Combine the Cabbage, chopped Green Onions and almonds in a salad bowl. Add dressing and mix well. Just before serving add the noodles and toss thoroughly.

Tips

To make a delicious meal add 300g shredded BBQ Chicken or BBQ Pork
