Girls' Night Dishes?

Does anyone have a great girls' night main dish for a busy mom? The girls may not be too adventurous, but I am. I'm open to a range of ideas!

What's the event for the girl party?
No event, we just get together once a month, if possible, and have dinner and gab. I've done fajitas and someone has done fondue. It's not super complicated, some have done soup and salad, but I like to entertain. I still find myself lacking in creative or easy ideas though! I'm glad I thought to go to iVillage, I hope to learn lots on this board! :)

I hope I'm not too late..but even if I am too late for this time, there's always more, right?!
This isn't very interactive at all, but easy and yummy. My DH taught me to make a noodle casserole, I've since jazzed it up with veggies. I don't have any measurements because I just toss in a bit of this and a bit of that and get tons of food.
Boil some noodles (any type you like, bow tie, elbow, swirly/twirly, etc) so that they are almost done, but not quite.
While the noodles are boiling, fry your hamburger/shredded chicken/whatever meat you want and some onion. Add a bullion cube to the cooking meat so it starts flavoring and also get broken up.
Or you can go vegetarian! Skip the meat and go straight for the (frozen) veggies + bullion cube mixed with a bit of hot water.
Mix the meat, noodles and some (frozen) veggies all together in a casserole pan (or two). Mix a couple of eggs and milk together and pour the mixture on top. Use enough to almost cover stuff, but not quite.
Shredded cheese on top is optional.
Bake at 350F for about 30min or until the egg/milk mixture is solid and bubbles at the edges.
A salad goes well with this.
