Fleischmann’s Bread Machine Yeast in a jar This is a highly active instant yeast recommended for all bread machine cycles. While it is especially suited to breads made in bread machines, it also is equally effective for baking when a bread machine is not used. Use in RapidRise recipes and follow the one-rise method.
2 1/4 teaspoons Bread Machine Yeast is equivalent to one envelope dry yeast.
Just reporting back, I made this recipe cut in half for dinner tonight. I only had a tin foil loaf pan, but I buttered it generously, and only took the loaf out of the oven when it showed signs of pulling away from the sides of the pan. It popped right out and looked beautiful DH had three slices with dinner, "just to keep it from drying our overnight".
What I watch for is the baked bread is pulling away from the sides of the pan. That's when I know it is done, and then I take it out of the oven and the pan for cooling.

Uh...I think it is 2. Fleischmann's is one of my biggest customers, we supply and clean the lab coats for them.

The only thing with demi-loaf pans is that you have to cut the cooking time back according to what you are doing.
What I watch for is the baked bread is pulling away from the sides of the pan.
That's when I know it is done, and then I take it out of the oven and the pan
for cooling.

they don't rise like white bread, and you are right, they don't look attractive like white bread either.
