I'm not sure where I saw it or what made me crave it, but I just had to have lasagne..so that is what I made yesterday for dinner.. or at least I made my version of it.

I wanted a white sauce and tons of veggies. I really wanted spinach, but they didn't have any fresh at the store I went to, so I went without because I was too lazy to thaw some.
Anyway, this is what I put in it:

Mixture:
3 eggs
food cream
milk
pepper
cottage cheese

Layers:
lasagne noodles
eggplant
zuchinni
mushrooms
onion
ground turkey meat
fresh basil (that I had frozen in my freezer)
shredded cheese (also some for the top)

1. Beat the eggs some and then add the rest of the 'mixture' ingredients, set aside for a bit.

2. Brown the turkey meat with the onion, chop the eggplant and zuchinni up into small cubes/pieces and slice the mushrooms.

3. Starting with the mixture, put a small amount in the bottom of your pan (I used a rectangle glass pan), then add a layer of the lasagne noodles and some of each of the other ingredients. Repeat until you have as many layers as you want or the pan is full.
(I managed 2 layers, with a bit of room for probably a 3rd layer..)

4. Sprinkle with some cheese on top. Put it in a preheated oven at 350F/175C for about an hour.

I always make so much when I do stuff like this that we have tons of left overs. Thankfully this freezes well. I now have lunch for today, dinner also for today and 2 meals for me for lunch at work for later. If we don't eat what is in the fridge today, I'll freeze that bit too for another meal for me.

In addition to what I made above, I also made a small lasagne with red sauce (pasta sauce, added basil and some egg for congealing).

Both are delicious!!

Now, that is funny, because I have been craving lasagne for weeks. But cooking for Don, he is harping constantly about his diet and low-everything, for one thing no cheese, on top of no fat, no cholesterol, etc.

People would actually boil the noodles first?!

Ugh! There's enough liquid and what not in the lasagne to cook them.. no boiling here!
